Gluten-Free Mixed Berry Loaf Recipe

Gluten Free Loaf
One of the biggest things that helps me de-stress is baking and lately I've been trying to get into the habit of cooking in a gluten-free style. Some recipes I have found to be a hit and a miss with the end result of a powdery texture and taste.. no one wants that. This particular recipe however has been successful and it's pretty damn tasty. Ingredients and method below:


180g Soft Butter
170g Golden Caster Sugar 
210g Gluten Free Self Raising Flour
1 Teaspoon Vanilla Extract
1 Teaspoon Baking Powder
60ml Milk
3 Eggs
110g Strawberry Jam
200g Mixed Berries (I used strawberries, blueberries and raspberries)
Icing Sugar (to dust)

Step One 
Preheat the oven to 170C and line a loaf tin with baking parchment. In a large bowl beat together the sugar and butter until light and fluffy. Once a fluffy consistency add in the eggs one at a time and whisk in between. Add in the vanilla extract and mix well.

Step Two 
Sift in the flour, baking powder and pour in all of the milk. Mix until all ingredients are combined to a pourable consistency.

Step Three 
Slice the mixed berries into small chunks before combining with the cake mix. Mix again until fruit is evenly distributed. Carefully pour into the prepared loaf tin and spread jam on the top of the mixture. With a blunt knife gently swirl the jam into the mixture.

Step Four 
Pop the tin into the oven for 60 mins and wait until the sponge has risen and looks a golden brown colour. Use the end of a cocktail stick to dip into the centre of the sponge. If the stick is clear from mixture, the cake should be cooked through.

Step Five 
Leave the cake to cool before lightly dusting with icing sugar. Now enjoy!

  1. Man I wish baking was a de-stresser for me, but then again I've never actually tried to bake when I'm stressed so maybe it'd work for me too- who knows!

    This mixed berry loaf looks absolutely awesome as well!
