Step Three
Slice the mixed berries into small chunks before combining with the cake mix. Mix again until fruit is evenly distributed. Carefully pour into the prepared loaf tin and spread jam on the top of the mixture. With a blunt knife gently swirl the jam into the mixture.

Step Four
Pop the tin into the oven for 60 mins and wait until the sponge has risen and looks a golden brown colour. Use the end of a cocktail stick to dip into the centre of the sponge. If the stick is clear from mixture, the cake should be cooked through.

Step Five
Leave the cake to cool before lightly dusting with icing sugar. Now enjoy!

Man I wish baking was a de-stresser for me, but then again I've never actually tried to bake when I'm stressed so maybe it'd work for me too- who knows!
